I was craving a salty and tasty snack today….
I looked in my fridge and viola Kale!
Preheat Oven to 350 degrees
Chop up Kale
Dry fully or they won’t come out crispy from the oven
Put Kale on tray
Add Olive Oil- 1 to 2 TBS
Massage the olive oil into the nooks and crannies of the kale
Place tray in oven for 10 minutes
Rotate tray cook for another 5 minutes
Check Kale to see if it is your desired crispness
Eat and enjoy!!
Sunday Funday Meal Prep For a Family of 4 for Sunday Dinner & Monday/Tuesday Lunches
London Broil, Pork Loin, Squash, Zucchini, and Broccoli
Shopping List- Squash, Zucchini, Broccoli, London Broil, Pork Loin, Worcestershire sauce, Garlic, Coconut Aminos, Mustard and Olive Oil
London Broil- mix garlic, coconut aminos, Worcestershire sauce and pour over London Broil in a plastic bag for at least an hour.
Pork Loin- mix garlic, coconut aminos, mustard, olive oil and pour over pork loin in a plastic bag for at least an 1 hour.
Veggies-Place on non-stick aluminum, salt/pepper/olive oil them up and place in 400-degree oven for 20 minutes.
Veggies- in a pan on the grill for about 20 minutes.
London Broil- cook on grill 7 minutes each side for medium-rare which is the way I enjoy it! Let rest for 5-10 minutes before cutting and cut against the grain.
Pork Loin- cook on grill about 30 minutes till 150 degrees or oven for 75min at 375 degrees. Let rest for 5-10 minutes before cutting.

Sunday Funday is a great day to meal prep! Have you thought about your week ahead and what you plan on eating? I sure do!
Pictured above is asparagus, sweet potato with Nutella and boneless, skinless chicken thighs with peaches.
Shopping List- Boneless, skinless chicken thighs, asparagus, sweet potato, 1-2 peaches, olive oil, 3 Tbs soy sauce or coconut aminos, Nutella, 1/4c Honey, salt and lots of garlic! Parchment paper or non-stick aluminum.
- Chicken thighs I wash and dry then place in the crockpot.
- Put together soy sauce or coconut aminos, honey and garlic and pour over the chicken.
- Tilt the lid a little bit so the steam escapes and chicken will have more of a glaze than end up watery.
- Cook on high 3 hours and check to make sure they are done or 165 degrees.
- Cut up peaches and put in the crockpot the last 20 minutes and then start the asparagus.
- Asparagus- cut off the ends or I snap off the ends.
- Wash, dry, add some olive oil and salt and coat the asparagus.
- Put asparagus on parchment paper or non-stick aluminum foil.
- Roast in the oven for 12-15 minutes on 425 degrees.
Sweet Potatoe with some Nutella on top!
- Cut small slits on each side.
- Wrap in a paper towel.
- Place in the microwave 8-9minutes and check to see it is done.
- Or can do above and put in the oven for 45/50 minutes on 425 wrapped in aluminum.

My other loves are fitness and food! Who doesn’t enjoy food?! I will be posting recipes that make your mouth water, AND they are simple and quick to prepare.
I will be posting about my fitness journey which has been quite the ride as I recently went through a 30 lb weight loss. Along with an exercise routine, much of my success comes from flexible eating and counting macros (which are protein, carbs, and fats and eating ice cream!) I will explain all these details so you can succeed too!
