Kale Chips


I was craving a salty and tasty snack today….
I looked in my fridge and viola Kale!
Kale Chips
Preheat Oven to 350 degrees
Chop up Kale
Wash
Dry fully or they won’t come out crispy from the oven
Put Kale on tray
Add Olive Oil- 1 to 2 TBS
Massage the olive oil into the nooks and crannies of the kale
Add salt
Place tray in oven for 10 minutes
Rotate tray cook for another 5 minutes
Check Kale to see if it is your desired crispness
Eat and enjoy!!

Sunday Funday Meal Prep 2– Let’s Get to Cooking!

Sunday Funday Meal Prep For a Family of 4 for Sunday Dinner & Monday/Tuesday Lunches 

London Broil, Pork Loin, Squash, Zucchini, and Broccoli 

Shopping List- Squash, Zucchini, Broccoli, London Broil, Pork Loin, Worcestershire sauce, Garlic, Coconut Aminos, Mustard and Olive Oil 

London Broil- mix garlic, coconut aminos, Worcestershire sauce and pour over London Broil in a plastic bag for at least an hour.

Pork Loin- mix garlic, coconut aminos, mustard, olive oil and pour over pork loin in a plastic bag for at least an 1 hour.

Veggies-Place on non-stick aluminum, salt/pepper/olive oil them up and place in 400-degree oven for 20 minutes.

Veggies- in a pan on the grill for about 20 minutes. 

London Broil- cook on grill 7 minutes each side for medium-rare which is the way I enjoy it! Let rest for 5-10 minutes before cutting and cut against the grain.

Pork Loin- cook on grill about 30 minutes till 150 degrees or oven for 75min at 375 degrees. Let rest for 5-10 minutes before cutting.

Pork Loin 4 ounces 24p, 7F, 0C

Squash 100 grams 1.2P, .2F, 3.3C

Zucchini 100 grams 1.2P,.1F,3.1C

Broccoli 100 grams 1P, 0F,4C

Veggies you can eat a lot of them and they fill you up! Enjoy your meals this week!

Sunday Funday Meal Prep

Sunday Funday is a great day to meal prep! Have you thought about your week ahead and what you plan on eating? I sure do! 

Pictured above is asparagus, sweet potato with Nutella and boneless, skinless chicken thighs with peaches.

Shopping List- Boneless, skinless chicken thighs, asparagus, sweet potato, 1-2 peaches, olive oil, 3 Tbs soy sauce or coconut aminos, Nutella, 1/4c Honey, salt and lots of garlic! Parchment paper or non-stick aluminum. 

Recipe

Chicken thighs

  • Chicken thighs I wash and dry then place in the crockpot.
  • Put together soy sauce or coconut aminos, honey and garlic and pour over the chicken.
  • Tilt the lid a little bit so the steam escapes and chicken will have more of a glaze than end up watery.
  • Cook on high 3 hours and check to make sure they are done or 165 degrees.
  • Cut up peaches and put in the crockpot the last 20 minutes and then start the asparagus.

Asparagus 

  • Asparagus- cut off the ends or I snap off the ends.
  • Wash, dry, add some olive oil and salt and coat the asparagus.
  • Put asparagus on parchment paper or non-stick aluminum foil.
  • Roast in the oven for 12-15 minutes on 425 degrees.

Sweet Potatoe with some Nutella on top!

  • Wash
  • Cut small slits on each side.
  • Wrap in a paper towel.
  •  Place in the microwave 8-9minutes and check to see it is done.
  • Or can do above and put in the oven for 45/50 minutes on 425 wrapped in aluminum.

“If you love fitness, food, and family, you’ll feel right at home here!” My name is Tracy and I am a full-time Physical Education Teacher, Mama, Wife, Sister, Friend, Crossfitter, and Flexible Eating Macro Counter! I am excited to begin blogging about the many things happening in my life (which are mostly comical when it relates to my two sons-Harrison and Maxswell).

I started this blog because I feel that others can relate to my daily life, strengths, struggles, humor, and those “did that just really happen” moments.   A video camera should be recording at all times at my home to capture these fun and funny times. (Don’t you worry I will be posting our home videos and I hope you get a chuckle from them as well.)

My other loves are fitness and food! Who doesn’t enjoy food?! I will be posting recipes that make your mouth water, AND they are simple and quick to prepare.

I will be posting about my fitness journey which has been quite the ride as I recently went through a 30 lb weight loss.  Along with an exercise routine, much of my success comes from flexible eating and counting macros (which are protein, carbs, and fats and eating ice cream!) I will explain all these details so you can succeed too!

I am excited to share my crazy lovin’ wild journey with you on fitfunfoodlovinmama!

“Just Happy 2 Be”

Are you wondering what "Just Happy 2 Be" means? I am sharing my story with you about this monumental phrase that has become part of my being then and now. While training for my first Half Ironman in 2008, my friend and I were on our bike portion of our workout when a car ran a red light and hit me on the right.  I went up, over the hood and hit the windshield all while attached to my bike.  I remember laying there and people coming over to help me off the hood of the car and remove me from the bike. Thankfully there was just some scrapes, soreness and bruising. It was hard to get the image out of my head of me laying there and what could have been and how this could have ended differently.  There was quite a bit of positive self-talk during this time and I reached out to family and friends. I was staying focused on all the things in my life I was grateful for and also the race ahead....which was AMAZING!! Although I did not win any medals this day for me this was winning a medal on how powerful the mind is and to keep going and going no matter what the struggle is. We all have daily struggles to overcome and for me, this was a true testament of being able to pull through and continue on! One day I am going to write a book and name it,"Just Happy 2 Be".... but in the meantime, we have my blog of fitfunfoodlovinmama which has been a great place to start! Love, Mama T

Great Start to the Day by Working Out

Good Morning!

I am off to a great start this morning and I hope you are too! We are up and running with Maxswell(age 4) and his brother Harrison(age 5). A little breakfast, some playtime, talking about macros(how many protein, carbs and fats you eat in a day) with a friend and now off to Crossfit wearing my Lulu of course! Stay tuned! Mama T
